Stained Glass and Grape Cakes

Buy 3 pound cakes (castella,) or bake a cake in 3 loaf pans. Arrange cakes on a platter in the shape of a cross.

Slide strips of tinfoil about 1-2 cm. under the cake to keep the platter clean.

Ice the top of the cake.

Ice the sides of the cake and make as smooth as possible.

Remove the tinfoil and clean any smudges off the plate.

Whip more cream or make more icing.

Put in a decorator bag with a star tip. Twist the opening so it doesn’t come out the back.

Some whipped cream comes with a bag and tip. If not, buy both at a 100 yen store.

Pipe stars around the bottom edge of the cake. Do this by holding the tip slightly above the plate, and not actually touching the cake. Squeeze until it forms a star, then  ease squeezing as you simultaneously yank the tip away from the star. It takes a bit of practice to get the hang of it, so you may want to practice on a cookie sheet. Then you can scrape it off and put it back in the bag and practice again.

Pipe stars around the top edge. If you are making the grape cake, arrange purple gummy candy in the middle, and add green spaghetti  gummy candy for vines. Real grapes could be used instead.

For the stained glass cakes, put chocolate icing or cream into a decorator bag. Cut off the tip. Twist the end of the bag so it doesn’t come out the back.

Pipe lines onto the cake to mark off the areas for the jam. Be careful not to touch the surface of the cake with the bag as you make the lines--hold it just above the cake as you squeeze out the line.

Mix jam to make it softer. I used strawberry, orange, and blueberry.

It is actually easier to spoon the jam on that to use a decorator bag. Use a small spoon.
