Chocolate Easter “Rocks” or Egg Strata Casserole
This is really a glorified french toast, so it’s quick. Mix cocoa and sugar in with the milk and eggs. But instead of dipping the bread in the egg mixture, cube the bread, mix it in the egg mixture. Scoop it out with a measuring scoop or large spoon onto a baking sheet--plan on one or two per person. Sprinkle with sugar and grated chocolate or chocolate chips. (The sugar makes the top nice and crispy as it bakes.) Bake for about 10-15 min, (depending on the size). in a 350 degree F oven, or until the tips that stick up are crispy. Sprinkle with powdered sugar or chocolate syrup or just eat plain. For a casserole version, dump it all into a casserole, but it will take about a half hour to bake.

Sprinkle in frozen berries (I like a combination of blueberries and raspberries) at the last minute, or else they melt and turn it gray--which is not a bad thing, since it is supposed to be a rock! Scoop it out with a measuring scoop or large spoon onto a baking sheet--plan on one or two per person. Sprinkle with sugar and grated white chocolate or white chocolate chips. (The sugar makes the top nice and crispy as it bakes.) Bake for about 10-15 min, (depending on the size). in a 350 degree F oven, or until the tips that stick up are crispy. Savory Easter “Rocks” or Strata Casserole
Cube bread, and put it in a casserole. Mix egg, milk, onion, salt and diced onions (if you like onions.) Pour on top of the bread cubes and sprinkle with cheese, meat, and / or vegetables.. Bake in the oven for 30 minutes, or until the tips are browned and cheese is melted. This can be mixed the night before, refrigerated, and baked in the morning.
